Cinnamon Roll Cookies

I love all things sweet but at this time of year our home is overflowing with cookies!  There are so many different kinds out there the possibilities are endless.  Last year I wanted to try a new cookies recipe for Christmas and after a Pinterest search I came across these.  They were such a big hit on Christmas day they were all eaten by the end of the night!

Be prepared to impress everyone with these cookies and to be asked to make them again and again! I was a little hesitant to make these at first because of the look of them with the cinnamon swirl and my lack of success with previous swirl cookies but these were so simple and came out so beautiful!

A few tips before you get started… The dough will feel a little sticky but if its too sticky for you then just add a bit more flour to make it manageable.  Be sure not to slice these too thin and watch them while baking to prevent over browning on the bottom!

Cinnamon Roll Cookies

  • Prep Time: 10m
  • Cook Time: 12m
  • Total Time: 45m
  • Yield: 3 Dozen +

Ingredients

Ingredients for Cookies

  • 1 cup room temperature butter
  • 1/3 cup granulated sugar
  • 3/4 cup confectioners sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 1/2 cups al purpose flour

Ingredients for Smear

  • 5 1/2 tablespoons butter, softened
  • 1/4 cup packed light brown sugar
  • 1 1/2 teaspoons light corn syrup
  • 1 tablespoon ground cinnamon
  • 1 tablespoon all purpose flour
  • 1/2 teaspoon vanilla extract

Ingredients for Glaze

  • 1/2 cup confectioners sugar
  • 1/2 teaspoon vanilla extract (optional)
  • 2 tablespoons water- more or less to get right consistency

Instructions

  1. In a bowl ( I use stand mixer with paddle attachment) beat together the butter, sugars, salt and vanilla until light and fluffy.
  2. Add in egg and beat until combined.
  3. Slowly beat in flour until just combined.
  4. Turn dough out on floured surface ( I just use counter but can use wax paper or whatever your preference) and roll out into square about 1/4" thick
  5. Make the smear by combining all smear ingredients in the bowl and mix using the paddle attachment.
  6. Spread smear all over top of dough and roll dough up jell roll style ( or like you were making actual cinnamon rolls!) To help with the dough not sticking I slide a floured flat edge icing tool under the dough to release it from the counter as I am rolling!
  7. Wrap roll in wax paper and freeze 20 minutes.
  8. Preheat oven to 375°
  9. Grease cookie sheet or use parchment or silpat.
  10. Remove cookie log from freezer and cut cookies 1/4" thick ( be careful not to slice too thin or they will brown too quickly.
  11. Bake cookies 12-14 minutes or until edges are just starting to golden.
  12. Let cookies cool on baking sheet 2 minutes then cool to wire rack.
  13. Combine all the glaze ingredients in a bowl and using a pastry brush glaze cookies ( I glaze my cookies slightly warm so the glaze melts in!) ENJOY!

Gluten-Free (flourless) Chocolate Cookies

It’s that time of year again!  The holiday season is upon us and the oven in our house is fired up and pumping out cookies and all kind of baked goods almost daily! I love my sweets.  Anyone who knows me knows that I love to bake so how do I balance my ginormous sweet tooth with staying healthy and fit through the holidays? I don’t shy away from enjoying my sweet treats I just enjoy them in moderation! I know it’s not as easy as it sounds so to help me not eat up a dozen cookies in a day, when I bake, I like to share the wealth with friends and family. It’s always a nice treat when someone shows up at your door with some fresh baked goods (they don’t need to know that you have to get them out of your house just so you won’t eat them all)!

These are a new favorite in our house that I have been craving ever since I last made them (yea even though they are gluten free believe me they are so good you will crave these)!  I made these cookies as one of my desserts I took to my in laws for Thanksgiving.  My mom-in-law is gluten free and it was such a nice treat to have something to take that she could also enjoy!  My father-in-law also enjoyed them too, even though he is not gluten free, and he was in awe that these cookies were actually gluten free!  After a few bites of his first cookie he asked me again if they were really gluten free!

These cookies are so rich and fudgy! The egg whites in them help crisp the tops, think meringues, and the chocolate chips in them make them ever so decadent that the taste like they are from a bakery! The best thing about these cookies (besides all the stuff I just said and they are gluten free…) there are only 7 ingredients and none of them are crazy things that if you aren’t gluten free you don’t usually have in your home like 10 different kinds of flours!  The struggle is real people.. when you want to make a great gluten free dessert but you don’t have all the specialty ingredients ( what is xanthan gum anyway?) .  Since these cookies are flourless you most likely have everything you need, already in your pantry, to bake these today!
