Belize Travel Missions Trip: Day 6

Our final day.  Today we got to experience a different side of Belize.  Our time here has been so packed full and I wouldn’t have it any other way.  This morning we broke off into smaller groups again and walked through town to eat breakfast looking for conversations where we could.  Our group ate at this little place off Back street called Boogies Belly! And it was amazing.  This was more a traditional Belizean restaurant.  They had meat pies… which are apparently big here as a lot of the people who were stopping in on their way to work were ordering these.  They also have the fryjack which was something else that Wayne (half-inch) recommended as well as a number of other locals we spoke to along the way.  It’s deep fried dough (not a sweet dough though.. that was shaped like an extra large burrito shell) it is then filled with eggs, cheese, your choice of meat, and of course, beans.  They had a whole menu of fry items.  I opted for the fryjack which I recommend.  If you are in Belize- eat a fryjack for breakfast.  One of the teen girls got a stuff jack which is all of the same items of the fryjack only they stuff it then EVERYTHING is deep fried together!  They seem to really like deep fried breakfast items here.  I now have a list of some staple Belizean foods and these deep fried items and coleslaw are on that list!

Belize Travel Missions Trip: Day 5

Only 2 days left on this Island.  The time seems to have flown by and already I am sad knowing our time here is coming to an end soon.  Today we broke our larger group (of 14 at this point) into smaller groups to go into the community for breakfast.  We each went our own ways to engage the community and get into gospel conversations.  Our group, which was my husband myself and one of the  teen girls, headed off down the street where we met a guy at the bank who recommended two places for breakfast and even gave us a ride (golf cart style of course) to show us where they were.  We invited him to join us for breakfast (on us) but sadly he couldn’t.  We walked the area around Estels by the sea (which I highly recommend for breakfast especially if you are looking for a taste of home with bagels, pancakes, etc.) and talked to a few locals.  That’s where we met this guy…

Belize Travel Mission Trip: Day 4

My heart again feels a heaviness for the people here, the people who have no lasting hope.  As we were surrounded today by garbage I am looking to see.. where will these people find hope?  Not here, not in any earthly thing they may run to, to try to fill themselves.  I am reminded of the hymn  ” My hope is built on nothing less, than Jesus’ blood and righteousness; I dare not trust the sweetest frame, but wholly lean on Jesus’ name.  On Christ, the solid Rock I stand, all other ground is sinking sand; all other ground is sinking sand.”  How fitting this song is.

This morning we started our day by attending a Sunday school program for local kids.  Chief is the one who runs this program.  There are other ministry events he holds here as well but Sunday mornings are for the kids.  Continue reading “Belize Travel Mission Trip: Day 4”

Belize Travel Missions Trip: Day 3

This morning we leave for the Caye (pronounced KEY). Because our scheduled changed, as it did a number of times during our short two days in Belize City, we had our morning freed up to get our bags re packed and head to the Municipal airport to pack our team into this plane and head to Ambergris Caye.  This post is a longer one as it has the most photos since it was a day where we got to just explore the area before our evening dinner with local believers.  Feel free to skip my commentary and just browse the photos!

Belize Travel Missions Trip: Day 2

Our second day started off with an early 7:30 am morning.  We headed off to Belize Central Prison with boxes of Bibles as well as the hygiene packs (that we prepared ahead of time) for women.   This area felt a little different from yesterday which felt more populated.  This isn’t completely remote.  There is a road, as you can see, that I noticed other cars using not just those heading to the prison.  The cars may be few and far between but its is not a private road.  The Kolbe foundation took over the ailing prison in  2002.  Since the Kolbe foundation is the one running this prison they are able to play scripture readings over their radio system throughout the entire prison.  They also offer a sort of 12 step program there for the inmates as well.  For the time being ( until Netflix changes again) you can watch Inside the World’s Toughest Prisons  and search through the episodes to find Belize Central Prison- the prison that found God.

Belize Travel Missions Trip: Day 1

Saying goodbye to the kids was the hardest thing I have had to do in a long time.  Wednesday was our final day to make sure our bags were packed, the kids were packed for a week away from home too, and everything was prepared for our trip out of the country for a week.  Wednesday evening did not bring peaceful rest but rather a late dinner followed by a late night baking with my middle daughter before they went to bed.  Carrot cake scones ftw and I was looking forward to having them for breakfast on the plane but sadly I forgot to take them with me!  I tried to sleep but mostly tossed and turned for an hour before it was time to wake ( just before midnight) and prepare our things since the group was meeting at our home before heading to the airport.  There were tears shed that night from some of our kids as well as from me but they were also excited, just as I was, for the opportunity to take part in this and looking forward to what work God might do in us and through us on this trip.

The drive in the middle of the night was great, no traffic and no problems.  I haven’t flown commercially or really in any plane (other than around the neighborhood twice in a two seater Cessna) in almost 12 years.  My plane phobia was a major deal that required lots of prayer and trusting in God and realizing who my Creator AND Sustainer is as well as my hearts desire to, above all, serve Him!

Easy 3 Ingredient Peanut Butter Cookies

 

This is a great quick and easy cookie recipe!  It’s kid friendly so they can help with this one (an adult should always supervise when using a mixer).  Bonus this recipe is gluten free and you probably have what you need in the cupboard right now to make these.  This fact also makes it a super life saver for those unexpected visitors so you can offer them a homemade treat!

Prone To Wander

‘Prone to wander, Lord I feel it… Bind my wandering heart to thee.’

The verses of this song ring so true. I am prone to leave the God I love. This is not something I, or you, suffer from alone. As Paul wrote in Romans 7:15 he states “For I do not do what I want, but I do the very thing I hate.” We know that our flesh and spirit are at war with each other to keep us from doing what we want to do. Galatians 5:17

But we are not lost and left there…wandering. In the verse prior (Galatians 5:16) it says to walk by the Spirit and you will not gratify the desires of the flesh.

George Müller said the first business of the day was to have his soul happy in God. —So how do we do this? He goes on to answer that by saying– the food for the inner-man is the word of God. (paraphrased)

Our First Day of Homeschool

Hello!  I am so excited to share this post for anyone who might be interested to walk through some of the things we will be implementing in our homeschool this year!

This is my first year homeschooling and let me just say I am excited to finally be doing this (so this post may be a bit long.. this is your warning if you want to just stop right here and skim the photos instead)!  I have a 6th grader, a 1st grader, and one who is Pre K and going to bridge into Kindergarten!  I know it is not going to be all rainbows and butterflies.  I have enough friends and family that homeschool to know that we will face some very hard times.  It may be frustration with subjects, or just different learning styles, winter blues, schooling multiple ages or any other number of things! I am starting our school year off strong and hopefully by the end of the school year we will still have a smile on our faces, love each other, and not just be watching educational videos and going on field trips every day 😉 ( but I’m not ruling that one out ).
